Cupcakes… From the sublime to the ridiculous; flavour combinations are endless. Yes, it’s about the velvety platform that carries the topping, but more often it’s about the topping and in this first combo it’s what’s inside and what’s on top that’s important.
Kick off with a classic combination – caramel and peanut brittle. And yes, you can make your own homemade peanut brittle!
- Ingredients for your favourite vanilla cupcake recipe (I’m still perfecting mine :))
- 1 cup unsalted butter (room temperature)
- 4 cups icing sugar (sifted)
- 2 tsp vanilla essence or good vanilla extract
- 8 tbsp cream (substitute with milk if preferred)
- 1/2 tin caramel treat
- 1 cup brown sugar
- 1/4 tsp salt
- 1/2 cup unsalted peanuts
Step 1: Whip the caramel vigorously with a spoon until smooth.
Step 2: Create a small cavity in the centre of the cupcake using a teaspoon (don’t pierce through the bottom of the cupcake).
Step 3: Pipe the whipped caramel into the cavity until filled.
Step 1: Combine the butter, icing sugar, vanilla and cream and beat until smooth in a food processor.
Step 2: Pipe or spread the icing onto the cupcakes.
Step 1: Heat the brown sugar with the salt in a saucepan on a low heat until dissolved and a rich amber color. Swirl the pan gently to incorporate all the sugar granules. Be extra cautious – the sugar is very hot and burns easily so keep a close eye on it!
Step 2: Spread the peanuts evenly on a baking tray lined with baking paper.
Step 3: Pour the sugar mixture over the peanuts coating evenly. Allow to cool until solid.
Step 4: Once cooled, break into shards using a knife.
Step 5: Use the smaller chunks for sprinkling on top of the iced cupcakes.
Simple, but soooo tasty…..
Use the smaller, finer peanut brittle crumbs as a topping for ice-cream for a quick and easy dessert.
Use the remaining peanut brittle shards, jar it up and stick on a pretty label. Take a long to your next dinner party as a gift for the hostess!

It all depends on the size of the container, but I like to make another batch of the brittle to really cram the jar full. Alternatively, double-up the recipe at the start when preparing for your cupcakes…
